The Ultra Extra Association brings together passionate olive growers and olive oil producers from Šibenik-Knin County who share a common vision – to produce and promote only the highest-quality olive oils of our region. Our community brings together those who believe that excellence is achieved through knowledge, dedication, and cooperation.
Through regular meetings, education, and the exchange of experience, we build a culture of quality and continuous improvement.
We believe that together we can raise the standards of olive growing and olive oil production and make Šibenik-Knin County recognisable for its exceptional oils – products that carry the aroma, flavour, and pride of our region.
Our main activities include education, competitions, tastings, fairs, and related events.
We have defined that the olive oil representing the Association must meet at least the following minimum criteria:
– free fatty acids (FFA) ≤ 0.5
– peroxide value ≤ 12 meq O₂/kg
and must be free of sensory flaws.
The annual membership fee is €50.
