ABOUT US

“The Doctor’s elixir”

Surgeon from Šibenik, Dr. Nino Brajković and his wife Kata Plenča, born Tare, a senior nurse, both employed at Šibenik General Hospital, live in Tarići, Donje Polje, a suburb of Šibenik. Alongside their daily work, no longer just as a hobby, they take care of a vegetable garden, orchard, and olive trees inherited from their parents. In addition to 300–400 seedlings of vegetables, fruit trees, and flowers, olives are their main focus.

They own two olive groves, located in Donje Polje and Dubravice (Gornje Graovo), with a total of 130 trees, 90 of which are in production. The dominant varieties are Oblica (Sladunica) and Skradin Krvavica, with several good pollinators among local varieties such as Lastovka and Levantinka. In the younger groves in Dubravice, only Krvavica has been planted, intended for the production of organic oil from local varieties.

Their brand name is Doktorova likarija (The Doctor’s Elixir), a name inspired by words Nino often heard in positive comments. Likarija (elixir) represents the centuries-old human pursuit of a remedy for longevity, and when a doctor produces such a high-quality oil, this oil truly earns the name Doktorova likarija.

They plan to plant another olive grove with Dalmatian indigenous varieties and create a unique Dalmatian blend—organic, local, and of premium quality—which is also the core focus of the Ultra Extra Association.

EXTRA VIRGIN OLIVE OIL, OBLICA VARIETY (500 ml)

Olive oil obtained from the indigenous Dalmatian Oblica variety is known for its softness and balance. Oblica is ideal for everyday cooking and dishes with delicate flavors, where harmony is desired rather than pronounced bitterness or pungency.

Appearance: Clear, golden-yellow to slightly greenish color, depending on the harvest time.
Aroma: Mild to medium fruity, with notes of ripe olive, almond, dried herbs, and occasionally apple or artichoke.
Taste: Soft, rounded, and smooth. Sweet almond notes prevail, along with mild herbal nuances.
Bitterness: Low to moderate, unobtrusive, and pleasant.
Pungency: Blaga, kratkotrajna, bez izražene oštrine.
Finish: Short to medium-long, warm, and harmonious.

EXTRA VIRGIN OIL, KRVAVICA VARIETY (500 ml)

Olive oil obtained from the indigenous Dalmatian Krvavica variety is known for its pronounced and characteristic sensory profile.
Krvavica oil has a strong character, higher intensity, and is rich in polyphenols. It is excellent for dishes that require a pronounced olive oil flavour, such as red meat, game, mature cheeses, legumes, and grilled dishes.

Appearance: Clear, intensely greenish to golden-green colour, especially with early harvests.
Aroma: Medium to distinctly fruity, with emphasised notes of freshly cut grass, olive leaf, artichoke, and green almond.
Taste: Intense and vibrant. Initially, herbal and green tones develop into spicier and more aromatic nuances.
Bitterness: Moderate to pronounced, clean, and persistent.
Pungency: Pronounced; often felt in the throat, leaving a characteristic "peppery" sensation.
Finish: Long-lasting, fresh, and energetic, with distinct herbal notes.

Olive oil obtained by combining the indigenous Dalmatian varieties Oblica and Krvavica is distinguished by a balanced and recognizable sensory profile.

Appearance: The oil is clear, golden-yellow to greenish in color, with a slight green reflection, depending on the degree of fruit ripeness at harvest.
Aroma: Medium to distinctly fruity, with notes of freshly cut grass, green almond, and olive leaf. Oblica provides a softer, rounded aroma, while Krvavica contributes more intense, green, and pungent notes.
Taste: Harmonious and balanced. Initially mild and soft (influence of Oblica), followed by the development of more pronounced herbal and almond notes from Krvavica.
Bitterness: Moderate, pleasant, and clean, well integrated into the flavour.
Pungency: Medium pronounced; appears gradually and leaves a pleasant, slightly warming sensation in the throat.
Finish: Long-lasting and elegant, with persistent herbal and almond notes.
