In cooperation with the Šibenik-Knin County, the Olive Growers’ Association of Šibenik-Knin County and the Krka Kistanje Rural Business Incubator, the second edition of the Month of olive oils of the Šibenik-Knin County hinterland will take place in March 2026.
First weekend – 7 March 2026
Pruning course: multi-trunk vase training system
During the first weekend, a pruning course will be held and led by experts Stjepan Dević and Toni Družijanić from the Zadar Olive Pruning School. In addition to the practical pruning demonstration, a short theoretical introduction to the training system will be provided. The location will be announced at a later date.
The pruning course will take place on Saturday, March 7, starting at 11:00 a.m., in the olive grove of OPG Ivić. The exact location is available at the following link: Google Maps Location Link.
Second weekend – 14 March 2026
The importance of proper olive nutrition

The second weekend is dedicated to education on olive fertilization and nutrition. The importance of proper olive nutrition in marginal olive-growing areas such as the hinterland of Šibenik-Knin County is often an overlooked factor in the development of olive growing.
The education will cover proper fertilization based on soil and leaf analysis in order to determine nutrient deficiencies. The training will be led by Dr. sc. Branimir Urlić from the Institute for Adriatic Crops and Karst Reclamation in Split.
The education will take place at the Krka Kistanje Rural Business Incubator at 4:00 PM.
Third weekend – 22 March 2026
From a premium olive to a premium olive oil
For this part of the event, all interested olive growers and olive oil producers are kindly asked to submit their olive oil samples to the Incubator by 25 February 2026.
All oils will undergo organoleptic and chemical analysis at the Institute for Adriatic Crops and Karst Reclamation. For analysis, a minimum of 0.5 l of olive oil in dark glass packaging is required.
Presentation of olive oil analysis results
After the chemical analyses and organoleptic evaluation of all oils have been completed, the results will be presented, followed by an olive oil tasting workshop. The main topic will be how to obtain premium olive oil from high-quality raw material.
The three highest-rated olive oils will receive a prize – a free olive oil label design. During the workshop, the designer will be introduced, and additional education on quality preservation and olive oil tasting will be held.
The event will take place at the Krka Kistanje Rural Business Incubator. The exact time is 10:00 AM.
Fourth weekend – 28 March 2026
Festival of flavors – pairing olive oils with fish products (TZ Adria)
Tasting workshop leader: Dino Bebić
The final weekend is dedicated to a workshop for tasting room managers and restaurant professionals who wish to learn how to pair pair premium olive oils with fish products.
The workshop will be led by renowned chef Dino Bebić and will take place at the tasting room in Kistanje, starting at 11:00 a.m.
